The whites now all safely tucked away in tank and barrel. Greg's filling the last of his Reserve Chardonnay barrels. This vintage he has selected 24 barrels of varying aged oak, ranging from 8 years old to these brand new french oak barrels from Tonnellerie Tremeaux.
Wild yeast fermentation, extended time on yeast lees and partial malo-lactic fermentation, add complexity to our Reserve Chardonnay, giving it a lovely length and enhancing the natural citrus and nectarine flavours.
