We are delighted to introduce our newest wine - the ODD TONNE OUT, our skin contact 2025 Pecorino.
Having made Pecorino for 3 years now, we thought the variety lent itself to trialling some skin contact to build texture and interest to the fruit, which was already bursting with flavour and high natural acidity.
The result is our inaugural ‘Odd Tonne Out’ 2025 Pecorino, a different interpretation of what this versatile variety can achieve.
With only 1000 bottles produced, we've been able to not only have fun handcrafting the wine, but also with the label!
Our skin contact Pecorino offers a refined textural richness and lively acidity, aromas of poached pear, ginger, orange peel and stone fruits that culminates in a long finish with balanced phenolics.
Harvested in cool of early morning and destemmed and lightly pressed the fruit to a small stainless steel vessel, the wine remained on skins for 16 days before lightly pressing. It then spent 3 months in seasoned oak barriques on gross lees for 3 months with weekly lees stirring.
